Soup with Mushrooms, Meat, and Potatoes

Amazingly delicious with an extraordinary aroma! Just a bomb! Soup with mushrooms, meat, and potatoes is a simple dish perfect for everyday family lunches. Millet is added for heartiness, but you can replace it with rice, lentils, or vermicelli.

Preparation
Step 1
You can use any meat for this soup – pork, beef, chicken, or turkey. I’m using dried porcini mushrooms, but you can substitute with any forest or frozen mushrooms.
Step 2
Pour boiling water over the dried mushrooms and millet. Cover the mushrooms and let them soak for a few hours. After 2 minutes, rinse the millet several times under cold water.
Step 3
Place bone-in meat in a pot, cover with water, bring to a boil, and simmer for 1.5–2 hours until tender. Skim off any foam as it appears. Once cooked, remove the meat from the bones, cut it into pieces, and return to the strained broth.
Step 4
Rinse the soaked mushrooms and boil them for 15–20 minutes.
Step 5
Peel and dice the potatoes, then add them to the pot with the meat. Cook for 10 minutes.
Step 6
Peel and rinse the onion and carrot. Finely chop the onion, and slice or grate the carrot. Heat a pan with a little vegetable oil, and sauté the vegetables for 2–3 minutes over low heat.
Step 7
Add the boiled mushrooms to the pan. Mix everything and sauté for another 3–5 minutes.
Step 8
Add this vegetable-mushroom sauté to the soup pot. Add salt and spices to taste. You can use dried basil or mushroom seasoning. Let everything cook together for another 5–7 minutes.
Step 9
At the end, optionally add chopped herbs. Ladle the soup into bowls and serve hot. Enjoy your meal!
