Step 1
Prepare all the ingredients listed in the recipe.
Step 2
Peel potatoes, onions, and carrots. Rinse and pat dry; excess moisture must be removed. Young potatoes can be baked with skins after washing with a soft brush.

Cut potatoes into small cubes and place them in a deep bowl.
Step 4
Chop onions into medium cubes and slice carrots thinly or into sticks. Add to the potatoes.
Step 5
Cut bell peppers in half, remove seeds. Slice pork fat (salo) into cubes. Use different colored peppers for a bright dish. Smoked or salted fat works best.
Step 6
Add your favorite dry spices: garlic powder, vegetable seasoning mix, smoked paprika, and ground peppers (0.5-0.75 tsp each). Add cherry tomatoes, washed and dried. Season with salt.
Step 7
Mix thoroughly, cover, and chill in the fridge or shade. Meanwhile, light the tandoor.
Step 8
When the fire burns out and the tandoor walls are hot, proceed to the next step.
Step 9
Mix the vegetables again and place them in an appropriate baking dish. If unavailable, create a deep tray from several layers of foil.

Place the trays on the tandoor rack.

Cover with a lid and bake until fully cooked, about 50-60 minutes. Midway (25-30 minutes), rotate the trays for even cooking.
