Pork Fat Patties
Juicy, soft, aromatic, and very tasty! A very unusual kind of patties - made from pork fat. There’s no meat at all. But don’t worry that lots of fat will render out while frying. You’ll get amazingly tender patties.

Preparation
Step 1
How to make pork fat patties? Prepare all the necessary ingredients. Use the kind of pork fat typically used for curing/salting. It may have small streaks of meat or none at all. The loaf can be slightly stale.
Step 2
Pour milk over the bread and let it sit for a bit so it softens.
Step 3
Cut the rind off the pork fat and chop it into small pieces so they fit into a meat grinder.
Step 4
Peel the onion and potato and rinse them under running water to remove any dirt. Then cut into pieces.
Step 5
Squeeze the softened bread to remove the milk and grind it through a meat grinder together with the pork fat, potato, and onion. Combine all the ground ingredients in one bowl. Use a large bowl so it’s convenient to mix the patty mixture.
Step 6
Add the egg. Season with a small amount of salt and spices to taste. Mix everything well by hand until smooth and uniform.
Step 7
Pour some breadcrumbs onto a separate plate. Shape small patties from the mixture and coat them in the breadcrumbs.
Step 8
Heat a frying pan until hot. Add a small amount of vegetable oil. Add the patties and fry over low heat for 2-3 minutes per side.
Step 9
The cooked patties will turn an appetizing golden color.

Transfer the patties to a serving dish and serve hot. Enjoy your meal!
