Oven-Baked Potatoes with Lard

Preparation
Step 1
Choose medium or large potatoes of the same size. Use any lard: fresh, salted, or smoked. Spices can be chosen to taste.
Step 2
For young potatoes, cook them with skins on. Wash thoroughly with a sponge to remove all dirt, rinse several times, and pat dry. I used mature potatoes, so I peeled them.
Step 3
Remove the skin from the lard and slice thinly, about 3 mm thick.
Step 4
Using a sharp knife, make longitudinal cuts in each potato about 1 cm apart, stopping 3-4 mm from the bottom.
Step 5
Insert a slice of lard into each cut.
Step 6
Place the potatoes with lard in a suitable baking dish. Cover with foil and bake in a preheated oven at 356-428°F (180-220°C) for 40-45 minutes, adjusting to your oven.
Step 7
Meanwhile, prepare a flavorful marinade. In a small deep bowl, combine vegetable oil, pressed garlic, a pinch of your favorite spices, and finely chopped fresh herbs. Mix well.
Step 8
After baking time, remove foil and brush each potato with the aromatic oil using a silicone brush.
Step 9
Sprinkle lightly with salt to taste (I used Adyghe salt). Return to oven and bake until fully cooked, 30-40 more minutes.
Step 10
Wash and pat dry fresh herbs, then chop finely.
Step 11
Sprinkle cooked potatoes with herbs and serve immediately.
