Zucchini with Potatoes, Cabbage, and Meat

Easy, healthy, tasty, and filling - perfect for a quick meal! Zucchini with potatoes, cabbage, and meat is a great standalone dish for family lunch. You can substitute or add vegetables and meat as you like. Ready in about 30 minutes, it’s ideal for a fast dinner too!

Step 1
I’ll be using pork, but you can substitute it with beef, chicken, or lamb if you prefer.
Step 2
You can cook this dish in a skillet, cauldron, or pot - use whatever is convenient. Rinse the meat, pat dry, and cut into evenly sized pieces. Fry the meat in a little vegetable oil for 5-10 minutes until the color changes. You can brown it slightly.
Step 3
While the meat is frying, peel the onion and carrot. Cut the carrot into rounds or sticks. Slice the onion into half-rings.
Step 4
Add the chopped onion and carrot to the meat. Mix and sauté together for another 2-3 minutes until the vegetables release a nice aroma.
Step 5
Peel, rinse, and cut the potatoes into large chunks. Add them to the meat along with a bit of water. Cover with a lid and simmer on low heat for 15 minutes.
Step 6
Meanwhile, shred the cabbage. Cut the zucchini into large pieces. I used young cabbage and zucchini - they cook quickly.
Step 7
Add the cabbage and zucchini to the pot. Mix the tomato paste with a bit of water and pour it over the dish. Stir everything together and cook for another 10 minutes. You can replace tomato paste with canned tomatoes or ketchup.
Step 8
At the end, add chopped tomatoes. Season with salt and spices to taste. Adjust the amount of water as you like. I prefer more sauce, so I add extra water. Use juicy but firm tomatoes to help them hold shape during stewing.
Step 9
Simmer everything for another 5 minutes, then remove from heat. The tomatoes will soften by then.
Step 10
Divide the finished dish onto plates and serve hot. Enjoy your meal!
