Zucchini with Chicken Baked in the Oven

Perfect family dish for holidays or daily meals! Zucchini with chicken baked in the oven is easy to prepare, yielding a hearty main and a light vegetable side.

Preparation
Step 1
You can use any parts of the chicken, or a whole chicken cut into pieces. For this recipe, I am using chicken drumsticks.
Step 2
In a large bowl, combine sour cream and mustard. Add turmeric, salt, and spices. I used a blend of ground peppers.
Step 3
Peel the garlic and press it directly into the bowl. Mix all ingredients thoroughly.
Step 4
Young zucchinis do not need to be peeled or seeded. Wash under running water and trim the ends. Cut the zucchini into medium-sized pieces. No need to cut very small.
Step 5
Place the zucchini into the bowl with the sour cream marinade.
Step 6
Add the chicken drumsticks to the same bowl. Mix everything so the marinade evenly coats the chicken and zucchini. Let it sit for 1 hour.
Step 7
Use any oven-safe baking dish. I used a ceramic dish. Place the chicken and zucchini with marinade into the dish. I arranged most of the zucchini on the bottom, then added the chicken, filling gaps with remaining zucchini.
Step 8
Add chopped tomatoes into the gaps. Cover the dish with foil and bake in a preheated oven at 350°F (180°C) for 45-60 minutes. Adjust baking time according to your oven.
Step 9
About 20 minutes before the end, remove the foil so the dish browns slightly. Take the baked chicken with zucchini out of the oven, serve hot on plates. The turmeric gives the chicken a golden color. Enjoy your meal!
