Zucchini Roll with Meat Filling (Baked in Oven)

Step 1
You can use any type of ground meat. I use pork. It’s best to make the ground meat yourself by passing it through a meat grinder.
Step 2
Wash the zucchini. If needed, peel the skin. Grate it on a coarse grater into a large bowl. Zucchini usually releases juice - drain it. You can even lightly squeeze the pulp to remove excess moisture.
Step 3
Add eggs and 2 tablespoons of mayonnaise to the grated zucchini. Mix until smooth. Add salt and spices to taste, keeping in mind that mayonnaise is already slightly salty. You might not need extra salt.

Add a bit of flour and mix it into the zucchini batter.

Line a baking tray (approx. 9x11 inches) with parchment or a baking mat and lightly oil it. Spread the zucchini mixture evenly and bake in a preheated oven at 356°F (180°C) for about 15 minutes. Adjust time and temperature based on your oven.

While the zucchini bakes, prepare the filling. Combine the ground meat with grated cheese, chopped herbs, and a little mayonnaise. Add salt and spices to taste.

Mix all the filling ingredients thoroughly until combined. The filling should be thick, but the mayonnaise adds some juiciness.

Remove the zucchini omelet from the oven and spread the meat filling evenly on top. Roll it up into a log.

Return the roll to the baking tray and bake again for 30-40 minutes.

Take the finished roll out of the oven. It should be golden and very appetizing. Slice, plate, and serve. Delicious hot or cold. Enjoy!
