Zucchini Fritters with Cheese and Garlic

Preparation
Step 1
I have a young zucchini, weighing about 1 lb (500 g).
Step 2
Wash the zucchini, cut off both ends, and peel if desired. Grate it on a coarse grater into a large bowl. If juice appears, drain it.
Step 3
Next, grate hard cheese into the bowl. Add one egg.
Step 4
Add a little salt and spices to taste. A mix of ground peppers and some paprika works well. Mix all ingredients until smooth.
Step 5
Add pressed garlic to the zucchini mixture. Sprinkle in some flour. Depending on the zucchini’s juiciness, you may need a bit more or less flour.
Step 6
Mix all ingredients well. The zucchini batter should be neither too runny nor too thick.
Step 7
Heat a frying pan until hot, add a little vegetable oil. Spoon small portions of batter into the pan and fry fritters over low heat on both sides.
Step 8
The fritters should turn a beautiful golden color. Zucchini cooks very quickly.
Step 9
Place the ready fritters on a paper towel to absorb excess oil. Serve with sour cream. They are delicious both hot and cold. Enjoy!
