Zucchini Baked with Cheese and Garlic

Preparation
Step 1
It’s best to use young zucchini with thin skin. Any cheese will work - this time I used store-bought shredded Gouda. Preheat the oven about 10-20 minutes in advance so it reaches the right temperature.
Step 2
Grate the cheese using a medium or fine grater. Peel, rinse, and dry the garlic, then press it through a garlic press. Mix the grated cheese with the minced garlic - this makes it easier to spread over the zucchini. I often use garlic powder since it blends more evenly with the cheese and is more convenient when cooking.
Step 3
Add your favorite spices to the cheese: you can use ground paprika, dried basil, and thyme. I used ¼ tsp of each spice. Mix well until uniform.
Step 4
Rinse and dry the zucchini. Trim off the ends. If using mature zucchini, peel the skin and remove the seeds. Slice into thin sticks.
Step 5
Place the zucchini into a baking dish. Drizzle with olive oil or vegetable oil. Add salt if needed (I usually skip it since cheese is salty enough). Sprinkle the cheese mixture evenly on top.
Step 6
Place the baking dish into the preheated oven and bake until done. The exact time and temperature depend on your oven - check the note under the recipe. I baked mine at 400°F (200°C) for 20 minutes on “top-bottom” mode, then switched to “convection” for another 5 minutes to brown the cheese.
Step 7
Garnish the finished dish with fresh herbs such as dill, parsley, or green onion. You can also add arugula and cherry tomatoes for a beautiful look! Serve with Greek yogurt mixed with dill and cucumber, or with tomato sauce for the perfect match.
Step 8
Serve hot straight from the oven as a side dish for meat or fish. These zucchini are also delicious cold, making them perfect for a picnic or buffet.
