Yeast-Free Fried Potato Pirozhki
Golden, soft, and tasty - a simple, quick snack! Yeast-free fried potato pirozhki turn out even for beginners. Since the dough doesn’t need to rise, they’re fast to make. You can swap the filling for any other, savory or sweet.

Preparation
Step 1
How do you fry yeast-free potato pirozhki in a skillet? Prepare the ingredients. Sift the flour in advance to aerate it - this makes the pirozhki fluffier. Warm the kefir until just warm (at least room temperature).
Step 2
For the dough, pour the kefir into a bowl and add baking soda, sugar, and salt.
Step 3
Mix in the eggs, then add vegetable oil.
Step 4
Add the sifted flour and knead the dough. You may need a bit more or less flour than stated - go by the dough texture.
Step 5
The dough should be tender, soft, and pliable. Cover it with plastic wrap and let it rest on the counter.
Step 6
Make the filling: peel the potatoes, cover with water, and boil until soft. Drain the hot water, then mash into a puree, adding butter.
Step 7
Peel and finely chop the onion. Pour vegetable oil into a skillet and fry the onion until golden.
Step 8
Mix the fried onion into the mashed potatoes.

Form small flat rounds from the dough, fill with the prepared filling, and shape pirozhki. You can replace the potato filling with, for example, braised cabbage - or even a sweet filling, such as dulce de leche.
Step 10
Fry the pirozhki in plenty of vegetable oil. Place them into hot oil and fry over low heat for 1-2 minutes per side until golden.
Step 11
Put the finished pirozhki into a bowl and cover with a towel. They will steam a little and finish cooking through. Enjoy!
