Preparation
Step 1
For the dough, you can use curd cheese in blocks. If you have grainy curd, press it through a sieve or blend it. It’s best if there are no large curds - then the dough will be smoother.
Step 2
In a deep bowl, beat 2 eggs with sugar and salt. Add the prepared curd cheese and mix thoroughly with a hand whisk or mixer.
Step 3
Then add vanillin and 2 Tbsp vegetable oil and mix until smooth. Add the sifted flour and baking powder. Knead a soft dough: first with a spatula, and when it becomes too thick to mix, transfer it to a floured surface and knead by hand.
Step 4
The dough should be soft. Roll it into a log and divide into 8 equal pieces (you can also divide into 10 or 12). The smaller the buns, the more they will rise during baking.
Step 5
Shape each piece into a ball to form buns (if the balls aren’t perfectly round, that’s fine - they’ll even out while baking). Place the buns on a parchment-lined baking sheet. Brush the tops with egg yolk and bake in a preheated oven at 180°C / 356°F for about 20-25 minutes (baking time depends on your oven).
