Yeast-Free Buns

Very soft, fluffy, and aromatic! You won’t find these in stores! Yeast-free buns are made quickly with simple cottage cheese dough. You can enhance their flavor by adding citrus zest, poppy seeds, nuts, or dried fruits. These buns are so delicious that everyone will ask for more!

Preparation
Step 1
Measure the necessary ingredients for the dough. It’s best to use soft, low-moisture cottage cheese. If your cottage cheese is grainy, blend it in a food processor for a smoother dough. Use odorless vegetable oil.

In a bowl, whisk the eggs with sugar, salt, and vanilla sugar until smooth. If using vanilla extract instead, mix it with the flour.

Add the cottage cheese to the egg mixture and stir well.

Pour in the vegetable oil and mix thoroughly.

Combine the flour with the baking powder. Sift the flour into the dough to aerate it, ensuring the buns rise well. Do not add all the flour at once, as the needed amount depends on the moisture content of the cottage cheese. Start mixing with a spoon, then knead by hand.

The dough should be soft and slightly sticky, which is typical for cottage cheese dough. If it's too sticky, add a little more flour.

Roll the dough into a log shape and cut it into 10-12 equal pieces.

Shape each piece into a round bun.

Place the buns on a baking sheet lined with parchment paper.

Brush the tops with egg yolk for a golden crust.

Bake in a preheated 180°C (356°F) oven for about 25 minutes until golden brown. Adjust the baking time based on your oven’s performance.
