Yeast Curd Pie with Apricot Jam

Preparation
Step 1
First, prepare the necessary ingredients for making the sweet curd-apricot pie in the oven.
Step 2
For the yeast dough, pour 200 ml (¾ cup) room-temperature milk into a mixer bowl, then add 1½ tbsp sugar, 1 tsp vanilla sugar, and 16 g (0.6 oz) fresh pressed yeast.
Step 3
Add 2 tbsp sifted all-purpose flour (taken from the total flour amount) into the mixer bowl.
Step 4
Mix everything well, cover with a towel, and leave the bowl in a warm place for 15-20 minutes to activate the yeast.
Step 5
After that, add 130 g (4.6 oz) of curd (farmer’s cheese) and 1 egg into the foamy starter.
Step 6
Sift 350 g (2¾ cups) all-purpose flour into a large bowl, add 1 tsp baking powder, a pinch of salt, and mix.
Step 7
Add this flour mixture into the mixer bowl and knead for 7 minutes. Then add 45 g (3 tbsp) softened butter and continue kneading for 2 minutes until smooth.
Step 8
Grease the dough with 1 tbsp vegetable oil, cover with a towel, and leave in a warm place for 1 hour to rise.
Step 9
Lightly flour a surface and place the risen dough on it. Divide it into two equal parts.
Step 10
Place one part into a baking form, spread evenly, cover with a towel, and let rest for 15 minutes.
Step 11
Knead the second part of the dough by hand, form it into a ball, and put it into a plastic bag.

After the resting time, adjust the dough in the form with your hands, then spread apricot jam evenly over it, leaving 1 cm (½ inch) from the edge.

Roll out the second part of dough into a thin sheet, slightly larger than the baking form.
Step 14
Using a pastry tip, cut small holes in the sheet, then place it over the pie base and spread evenly.
Step 15
Tuck the edges of the top sheet under the bottom dough, cover with plastic, and let the pie rest for 15–20 minutes.
Step 16
Brush the risen pie with warm milk. Bake in a preheated oven at 170 °C (340 °F) for 25-30 minutes until fully baked.
Step 17
Remove the pie from the oven and carefully take it out of the baking form.

Cut the sweet curd–apricot pie into slices, place them on serving plates, and serve.
