Preparation
Step 1
Prepare the ingredients. You can roast the chicken whole or cut it into serving pieces beforehand. Adjust or replace the seasonings according to your taste.
Step 2
Combine the sour cream with the garlic passed through a press, chicken seasoning, salt and ground black pepper. Mix thoroughly and leave the sauce to infuse. You can replace the sour cream with mayonnaise or use equal amounts of sour cream and mayonnaise.
Step 3
Rinse the chicken and pat it dry. Cut it lengthwise along the breastbone and open it out flat. If desired, lightly pound the chicken from the back to help tenderize it.
Step 4
Coat the chicken thoroughly on all sides with the seasoned sour cream. Cover and marinate for 1 hour in the refrigerator. For a stronger flavor, leave it refrigerated for longer.
Step 5
Rinse and peel the potatoes. Cut them into large wedges.
Step 6
Place the potatoes in a bowl. Drizzle with vegetable oil, season with salt and ground black pepper and mix well.
Step 7
Arrange the potatoes in a single layer inside a roasting bag. Place the marinated chicken on top. Secure both ends of the bag. Make a small cut above the chicken to allow steam to escape.
Step 8
Bake in an oven preheated to 375°F for approximately 1½ hours. Carefully open the roasting bag and return the chicken to the oven for another 10–15 minutes, until the skin becomes golden brown. You can use the broiler setting for the final few minutes. Check that the thickest part of the chicken has reached an internal temperature of at least 165°F.
Step 9
Transfer the cooked chicken and potatoes to a serving dish and serve immediately.
