Preparation
Step 1
Prepare the ingredients. Choose fresh, medium-sized button mushrooms, keeping in mind that they will shrink slightly during baking.
Step 2
Rinse the mushrooms thoroughly under running water to remove any dirt, then place them on paper towels and dry well to remove excess moisture.
Step 3
In a large bowl, combine the soy sauce, mayonnaise and melted butter. Adjust the amount of soy sauce to taste, making sure there is enough marinade to coat the mushrooms evenly.
Step 4
Peel the garlic and press it directly into the bowl. Season with salt and spices to taste, keeping in mind that both soy sauce and mayonnaise are already salty, so additional salt may not be necessary. Add ground black pepper and a little dried basil or other herbs, then mix until smooth.
Step 5
Add the mushrooms to the marinade and mix thoroughly so they are evenly coated. Leave to marinate for approximately 30 minutes.
Step 6
Line a metal baking dish with foil and arrange the mushrooms cap-side down. Pour over the remaining marinade. Bake in an oven preheated to 350°F for approximately 30–40 minutes, adjusting the time according to your oven.
Step 7
Remove the baked mushrooms from the oven and transfer them to a serving plate. Serve warm or chilled.
