Peel the onion and carrot, and rinse under running water. Finely chop the onion and grate the carrot on a coarse grater. To reduce eye irritation when chopping onion, rinse both the onion and knife with cold water.

Use a deep skillet for cooking. Heat it well and pour in a little vegetable oil. Add the chopped onion and carrot. Sauté over low heat for 2-3 minutes until the vegetables soften slightly.

Peel the potatoes, rinse them, and cut into large chunks. Add them to the skillet.

Slice the bell pepper into strips and add it to the skillet. Stir everything. Continue frying for another 3-5 minutes.

Meanwhile, dice the zucchini. If it's young, there's no need to peel the skin.

Add the diced zucchini to the skillet and pour in a bit of hot water. Season with salt and spices to taste. Stir everything and simmer under a lid over low heat for 15-20 minutes.

Cut out the stems from the fresh tomatoes and dice them into small pieces.

When the potatoes and zucchini are soft, add the diced tomatoes to the skillet. Simmer everything together for another 5-7 minutes, then remove from heat. Add a bit of garlic for aroma.
