Vegetable Stew with Chicken and Zucchini

A tasty and simple dish for both holidays and everyday meals! Vegetable stew with chicken and zucchini can be cooked daily. The best part is you can substitute the vegetables and meat for different ones, making a new dish every time.

Preparation
Step 1
You can use any chicken parts for the stew, or even chicken breast. I’ll use chicken thighs. Peel the potatoes in advance and rinse. Choose young zucchini without seeds and with tender skin.
Step 2
Chop the chicken into pieces. In a deep skillet, sauté pan, or heavy-bottomed pot, add a little vegetable oil and the chicken pieces. Fry over high heat for 3-5 minutes.
Step 3
Meanwhile, peel the onion and carrot. Cut them into pieces. If you prefer, grate the carrot on a coarse grater.
Step 4
Add the onion and carrot to the pot with the chicken and sauté together for another 2 minutes until fragrant.
Step 5
Shred the cabbage and dice the zucchini.
Step 6
Add the potatoes, cut into large chunks, to the pot. Then add the cabbage and zucchini.
Step 7
Pour in hot water. The amount of water depends on your preference. Add salt and spices. Stir, bring to a boil, cover, and simmer for 20-30 minutes until the vegetables are tender.
Step 8
At the end of cooking, add garlic pressed through a garlic press.
Step 9
The stew with chicken and zucchini is ready! Serve hot in bowls. Enjoy your meal!
