Vegan Pumpkin Puree Soup with Spices

Preparation
Step 1
First, prepare the necessary ingredients and spices. You can adjust the set to your taste.

Cut into large random chunks: 400 g (14 oz) pumpkin, ½ carrot, ½ bell pepper, ¼ onion, 1 tomato, and 200 g (7 oz) celery.

Take a suitable saucepan or sauté pan and place the chopped vegetables in it. Add 400 ml (1⅔ cups) boiled water.

Place the pan on the stove, cover with a lid, and bring vegetables to a boil over high heat.

Once boiling, add salt to taste and 2 tbsp vegetable oil.

Add horseradish-tomato relish or adjika (with horseradish, garlic, and salt) to taste.

Reduce heat to low, cover again, and simmer vegetables for 15-20 minutes.

After this time, add vegetable seasoning to taste.

Add dried herbs to taste.

Use a blender to puree everything in the pan into a smooth mass.

Cover with a lid and warm the soup again over low heat for 2 minutes until fully ready.
