Vegan banana bread

Step 1
Preheat the oven to 180C and prepare a 900g loaf tin by greasing and lining it with baking parchment.

In a large mixing bowl, combine the mashed bananas with the sugar, flour, sultanas, nuts (if using), mixed spice, and baking powder. Mix gently until the ingredients are just incorporated, then stir in the oil and mix thoroughly.
Step 3
Transfer the batter into the prepared tin, smoothing the top evenly. Bake for 55-60 minutes, or until a skewer inserted into the center comes out mostly clean with just a little moisture.
Step 4
Allow the loaf to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely for about an hour.
