Preparation
Step 1
You can use turkey fillet from either the breast or thigh.

Rinse the turkey fillet, pat it dry, and slice lengthwise into 2-3 pieces depending on thickness.

Cover each piece with plastic wrap and gently pound it with a meat mallet, keeping the meat intact. There should be no holes for the cheese to leak through while frying. If a hole appears, cover it with another small piece of meat.

Sprinkle each piece with dried garlic, turkey seasoning, salt, and pepper.

Slice the cheese into thin pieces. Choose any cheese you like - regular hard cheese, mozzarella, or suluguni all work great.

Place 2-3 cheese slices on one half of each cutlet.

Fold the cutlet in half so the cheese and seasonings stay inside. Repeat with the rest.

Beat the eggs thoroughly with a fork until the yolks and whites are well combined.

Dip each folded cutlet completely in the beaten eggs.

Coat both sides generously with breadcrumbs. You can use store-bought ones or make your own by drying and grinding white bread.

Heat vegetable oil in a frying pan over high heat. Add the cutlets and fry for about 4-5 minutes on each side until golden brown. If the meat is thinly pounded, it will cook quickly.

Transfer the cooked turkey cutlets to a plate and serve hot. Enjoy your meal!
