Turkey Lagman with Vegetables and Noodles

Easy to prepare, hearty, and delicious! Turkey lagman with vegetables and noodles is light yet incredibly filling. Favorite spices give it a unique, savory flavor. You can use turkey breast or thigh.

Step 1
I used turkey thigh, but you can use breast or any other meat you prefer. The amount of vegetables can be increased or decreased to taste.
Step 2
Remove the skin and bone from the turkey thigh. Rinse the meat, pat it dry with paper towels, and cut it into small, evenly sized pieces.
Step 3
In a deep skillet or a thick-bottomed pot, heat a small amount of vegetable oil. You can also use a cauldron for cooking lagman. Add the turkey and fry over high heat, stirring constantly, until browned. Then reduce the heat, pour in 1/4 cup of hot water, cover with a lid, and simmer the meat for about 40 minutes. Occasionally open the lid to check that the turkey is not sticking.
Step 4
Meanwhile, prepare the vegetables. Peel the potatoes, onion, carrot, and garlic (if using). Cut the pepper in half and remove the seeds. Rinse everything in cold water.

Dice the onion, carrot, and bell pepper into small cubes.

Dice the potatoes into small cubes as well.
Step 7
Add diced tomatoes, onion, carrot, pepper, and garlic (pressed or finely chopped) to the pot.

Season with salt to taste and add your favorite spices.
Step 9
Pour in the necessary amount of water. Add the potatoes to the pot, bring to a boil over high heat. At this stage, you may add tomato paste or ketchup if desired. Stir everything, reduce the heat to low, and simmer under a lid for at least 30 minutes.

Meanwhile, cook the noodles according to the package instructions, then drain in a colander.

Taste the lagman, adding more salt or pepper if needed.

Place noodles into each bowl and ladle the desired amount of aromatic lagman over them. Garnish with fresh herbs and serve.
