Turkey Ham in a Ham Maker

Juicy, healthy, and perfect for the whole family for breakfast or a snack! Turkey Ham in a Ham Maker is 100% natural, containing only meat and spices. Despite no additives, the ham stays moist. Cooking it is easier than it seems.

Preparation
Step 1
Take turkey fillets from different parts for juicier ham. I used thigh and breast fillets. Fresh meat is best. Salt and spices depend on taste; I used curry, sweet, and smoked paprika.
Step 2
Chill the meat well; you can freeze it for an hour to make it firmer and easier to cut. Cut into small 1×1 cm cubes. Remove sinews but keep some fat for juiciness.
Step 3
Mix the meat. Grind about a quarter into mince using a meat grinder or chopper. Return the mince to the cubed meat.
Step 4
Add salt and all spices. Optional: add gelatin at this stage.
Step 5
Mix the meat well until sticky and almost uniform, kneading for at least 5 minutes.
Step 6
Assemble the ham maker according to your model. Line it with a long oven bag, tie one end, and insert into the device. Pack the meat tightly with a spoon.
Step 7
Tie the free end of the bag as close as possible to the meat and trim excess. Place the second base and secure with springs. Refrigerate for at least 4 hours.
Step 8
Put the ham maker into a pot and cover with cold water. Some may remain uncovered, that’s fine. Turn the device a few times during cooking.
Step 9
Cook over low heat. When water reaches 80-85°C (176-185°F), reduce to minimal heat. Do not cover the pot. Cook 2-2.5 hours, avoiding boiling.
Step 10
Cool completely. Leave in the pot with water, then refrigerate at least 8 hours. Only then remove the ham from the device.
Step 11
The finished ham slices easily without crumbling. Store in a sealed container in the fridge.
Step 12
Serve as a snack or make sandwiches. Enjoy!
