Turkey Fillet with Mushrooms

Buy fresh medium-sized champignons that are snow-white, without spots, damage, or any smell of rot. They should not feel slimy to the touch. Rinse the mushrooms thoroughly under a stream of warm or cold water to remove soil. Cut away any spoiled areas if needed. Tiny mushrooms up to 2 cm in size don’t need peeling; just wash them well. Larger champignons are recommended to be peeled of their thin film.
Preparation
Step 1
You can use turkey fillet from either the breast or thigh. Use large, selected eggs. If your eggs are small, take 4 instead.
Step 2
Wash and pat dry the turkey fillet. Slice each fillet lengthwise into pieces about ½ inch (1 cm) thick. You can use a whole large fillet and cut it yourself into slices, or buy pre-sliced portions like I did.
Step 3
Wash the mushrooms, pat them dry, and cut them into slices.
Step 4
Beat the eggs thoroughly with a fork until the whites and yolks are well combined.
Step 5
In a bowl, mix together semolina, breadcrumbs, chicken seasoning, salt, and pepper. Stir thoroughly. You can use store-bought breadcrumbs or make your own from dried, crushed white bread. If you’re using ready-made spice blends, check the label for salt, as many mixes already contain it - otherwise, you risk over-salting your dish.
Step 6
Dip the turkey slices on all sides into the beaten eggs.
Step 7
Then coat them on all sides in the breadcrumb mixture. Dip them again into the beaten eggs. Finally, coat one side again in the breadcrumb mixture.
Step 8
Heat a little vegetable oil in a skillet over low to medium heat. Place the fillets into the skillet with the side coated in the breadcrumbs facing down. Arrange the mushroom slices on top of the turkey, gently pressing them into the meat. Fry for about 5 minutes.
Step 9
Carefully flip the turkey over so that the mushrooms are now on the bottom. Fry for another 3–5 minutes, or slightly longer until the turkey is fully cooked through.
Step 10
Transfer the finished turkey fillet with mushrooms onto a serving dish and serve with any side dish. Enjoy your meal!
