Turkey Fillet Baked in Foil

You can replace turkey with chicken or any other type of meat of your choice. However, keep in mind that cooking time and calorie content will vary.
Preparation
Step 1
Any turkey fillet will do - I used breast. It’s best to use chilled meat for juicier results. If using frozen meat, defrost it in the fridge in advance. Adjust spices and lemon juice to taste.
Step 2
Rinse the fillet and pat dry with paper towels. Cut into large portions weighing around 7-9 oz (200-250 g). Avoid smaller pieces as they tend to dry out.
Step 3
In a bowl, mix vegetable oil and lemon juice. Add salt and your choice of spices (I used curry, paprika, and ground black pepper). If using a spice mix, check if it contains salt.
Step 4
Coat the meat thoroughly in the marinade. Let it sit for 20-30 minutes (or up to 2-3 hours, or overnight in the fridge). Preheat oven to 350°F (180°C) about 30 minutes before baking.
Step 5
Take a large piece of heavy-duty foil, fold it in half. Place one fillet in the center, add a small piece of butter on top for extra juiciness. Fold the foil into a sealed envelope.
Step 6
Place the foil packets in a suitable baking dish.
Step 7
Put the dish into the preheated oven at 350°F (180°C). Bake for 40 minutes. Then remove the dish but keep the oven on. Open the foil packets to expose the meat.
Step 8
Return to the oven for another 10 minutes to brown the top. Cooking time may vary depending on your oven.
Step 9
Serve immediately. You can leave the meat in the foil shaped like little boats or slice and plate it. Enjoy!
