Triangular Cottage Cheese Cookies with Sour Cream and Butter

Step 1
Prepare the necessary ingredients to make delicious homemade cookies.
Step 2
Start the dough: put 400 g cottage cheese (about 14 oz) into a large bowl.
Step 3
Add 2 Tbsp sour cream.
Step 4
Blend everything until smooth and uniform.
Step 5
Add 1 tsp vanilla sugar, then add 180 g softened butter (about 6.3 oz / 3/4 cup + 1 Tbsp).
Step 6
Mix until you get a smooth, paste-like mass.
Step 7
Sift in 300 g wheat flour (about 2 1/2 cups) and add 1 tsp baking powder.
Step 8
Mix and knead into a dough.
Step 9
Sprinkle a little sifted flour on the table, place the dough on it, and knead well.
Step 10
Gather the dough into a ball, put it into a plastic bag, and place it in the freezer for 30 minutes.
Step 11
After 30 minutes, take the dough out and divide it into several equal pieces. Sprinkle a little flour on the table and press out each piece.
Step 12
Roll out each piece into thin rounds about 3 mm thick (about 1/8 in).

Use a cookie cutter of a suitable size to cut out the cookie blanks.

Pour 130 g sugar (about 2/3 cup) into a plate and dip each blank in sugar on one side.

Fold each blank in half with the sugar side inside, then dip again in sugar.

Fold once more into a triangle and dip again in sugar, then place on a baking sheet lined with parchment paper.
Step 17
Preheat the oven to 180°C (356°F) and put the baking sheet in to bake the cookies.
Step 18
After 20 minutes, remove the baking sheet from the oven.
