Thin pancake recipe (crepes)
Light, soft, and delicious apple-infused pancakes made with a simple batter - perfect for breakfast or dessert with fruit, berries, yoghurt, or a squeeze of lemon.

Preparation
Step 1
Place the flour into a large bowl and create a well in the centre.
Step 2
In a jug, whisk together the milk, eggs, and apple sauce. Pour this mixture into the well and begin whisking, slowly pulling the flour in from the sides until the batter becomes smooth. If it seems too thick, add a touch more milk.
Step 3
Heat a 20cm/8in frying pan and lightly wipe the surface with a little oil using kitchen paper. Add around 5 tablespoons of batter to the pan, swirling it to coat the base in a thin, even layer.
Step 4
Cook over a medium heat for 1-2 minutes, or until the underside turns golden brown. Loosen and flip or toss, then cook for another 30 seconds-1 minute until the other side is also golden.
Step 5
Transfer each finished pancake to a plate and keep covered with a tea towel to stay warm while you repeat the process with the remaining batter.
Step 6
Serve the pancakes with berries, lemon juice, fruit, or yoghurt.
