Thin Fried Pies with Potatoes in a Pan

Preparation
Step 1
Peel the potatoes for the filling, rinse under running water, cover with water, and set to boil.

For the dough, mix kefir with baking soda. Stir.
Step 3
Pour the kefir into a bowl for the dough. Add salt, sugar, vegetable oil, and egg. Mix well.
Step 4
Gradually add sifted flour and knead the dough. You may need a little more flour, so check the dough’s consistency.

The dough should be soft and non-sticky. Grease it lightly with oil, cover with a towel, and let it rest.

Once potatoes are boiled and soft, drain the hot water.

Add butter and mash with a masher. Then add cottage cheese and chopped herbs. Salt to taste. Mix well and let the filling cool slightly.

Divide the rested dough into portions. Form flat circles from each piece and place some filling inside.

Shape into pies.

Roll each pie slightly with a rolling pin.

Heat vegetable oil in a skillet until hot. Fry the thin pies on low heat for 1-2 minutes on each side.

They should become golden brown.
