Sweet potato rösti

Preparation
Step 1
Combine finely chopped red onion, red pepper, pressed garlic, and grated ginger in a large bowl. Add cornflour, season with salt and pepper, and mix well. Grate the sweet potato, squeeze out the excess moisture, and stir into the mixture.
Step 2
Sift in flour and mix thoroughly. Let rest for 5 minutes to allow the flour to absorb the moisture. Adjust with extra flour if needed until the mixture holds together when shaped.
Step 3
Heat a teaspoon of rapeseed oil in a large frying pan over high heat. Shape the mixture into 8-10 balls and flatten into röstis.
Step 4
Fry in batches, 5-6 minutes per side, until crisp and golden. Drain on kitchen paper and keep warm between batches.
Step 5
Serve the sweet potato röstis hot with a generous spoonful of your favorite sauce.
