Sugar-free carrot cake with frosting

- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Preheat the oven to 180 C. Grease and line the base of a 20cm springform cake tin with baking parchment.
Step 2
Begin by combining flour, baking soda, ground almonds, dried fruits, nuts, spices, and a touch of bicarbonate of soda in a large bowl.
Step 3
In a separate bowl, whisk together eggs, oil, and milk, then stir in freshly grated carrot.
Step 4
Fold the wet mixture into the dry ingredients to create a thick, hearty batter.
Step 5
Transfer the batter into a prepared springform tin and bake for around 35 min or until a skewer comes out clean. Once cooled, remove from the tin and discard the lining paper.
Step 6
For the frosting, gently mix soft cheese with fragrant orange zest, then spread it generously over the top of the cake.
Step 7
Decorate the cake as you desire and slice into wedges and serve.
