Stuffed Pancakes with Cottage Cheese and Raisins

Preparation
Step 1
First, prepare all ingredients for making homemade pancakes using a tried-and-true recipe.

Begin the batter: crack three eggs into a large bowl, add ½ tsp salt, and whisk until smooth.

Add 2-3 tbsp sugar and mix.
Step 4
Pour 3 tbsp vegetable oil into the egg mixture and continue mixing.

Add 250 ml of room-temperature kefir and mix well.

Add 300 g of sifted all-purpose flour.

Mix thoroughly to prepare a thick, smooth batter base.

Pour in the remaining 250 ml kefir and mix until homogeneous.

Slowly pour 250-300 ml boiling water, mixing until a custard-like batter forms.

Add ½ tsp baking soda, mix, then set aside for 30 minutes.

For the filling, place 500 g of 5% fresh cottage cheese in a bowl and add 1 tsp vanilla sugar.

Add 150–200 g sour cream, then blend into a smooth curd mixture.

Add 100 g of washed and dried raisins, mix thoroughly - filling is ready.

Preheat a skillet with a small amount of vegetable oil.

Set heat slightly above medium, pour batter to make pancakes, fry until lightly golden on both sides, and place on a plate.

Place 1 tbsp of cottage cheese-raisin filling along one edge of each pancake.

Fold the edges and roll into tight cylinders.
