Strawberry Pastry

A bright and refreshing summer dessert with an incredible aroma! Strawberry Pastry with tender sponge, curd-yogurt cream, and fresh strawberries will be a perfect treat for a festive table. Preparing it takes time and effort, but the result is worth it.

Preparation
Step 1
Start with the sponge cake. Use high-quality flour. Eggs should be large. If using small eggs, take 4.
Step 2
Separate yolks from whites. Make sure no yolk gets into the whites, or they won’t whip.
Step 3
Beat the egg whites with ice-cold water until fluffy.
Step 4
Continue beating, gradually adding sugar. Then, still beating, add yolks one by one.

Sift flour, cornstarch, and baking powder into the batter.
Step 6
Gently fold with a spatula.

Pour batter into a parchment-lined baking pan (10×14 in / 25×35 cm). Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until a toothpick comes out dry. Do not open oven while baking, or the sponge may collapse.

Cool the sponge and slice it lengthwise into two layers.

Prepare the filling.

Wash, dry, and hull strawberries. Leave berries whole.

Prepare the cream. Use quality dairy products. Fat percentage can vary, but it affects calories. Example: cottage cheese (9%), yogurt (3%). Choose soft cottage cheese for easier blending. Adjust sugar to taste.

Soak gelatin in water and let it bloom.

Melt it over low heat, do not boil.

Whip cream into stiff peaks.

In a separate bowl, beat cottage cheese, yogurt, sugar, and lemon juice until smooth.

Add whipped cream and mix again.

While mixing, slowly pour in gelatin. Work quickly before the cream starts setting.

Place one sponge layer into a pan (springform works best, but you can reuse the same pan).

Spread most of the cream evenly on top.

Place whole strawberries over the cream.

Cover with remaining cream.

Place the second sponge layer on top.

Prepare strawberries and clear cake glaze for decoration.

Wash, dry, hull, and slice strawberries.

Prepare clear cake glaze according to package instructions.

Arrange sliced strawberries on top of the cake. Pour over glaze. Refrigerate 3-4 hours until fully set.
