Strawberry and Cottage Cheese Pie

Bright, summery, aromatic, festive, and very tasty! Strawberry and Cottage Cheese Pie is an open tart with shortcrust pastry, flavorful cottage cheese filling, and vibrant fresh strawberry confiture. It takes effort, but the result is worth it!

Preparation
Step 1
Use all-purpose flour.
Step 2
In a blender, combine flour, cold cubed butter, sugar, and salt. Pulse until mixture resembles fine crumbs.

Add egg yolks and ice-cold water.
Step 4
Quickly knead into a smooth shortcrust dough. When it pulls away from the bowl and no longer sticks to hands, it’s ready.
Step 5
Wrap the dough in plastic wrap or a bag and refrigerate for 30 minutes.
Step 6
Roll out chilled dough on parchment into a thin circle slightly larger than your baking pan (≈9-10 inches / 22-24 cm).

Transfer dough to a greased and floured baking pan and form edges.

Place parchment paper over the dough and add a dry weight (beans work well). Bake in a preheated 350°F (180ºC) oven for 20-25 minutes.

Meanwhile, prepare the filling. Melt butter and let cool. Any fat content cottage cheese works.

Wash, dry, and dice the strawberries.
Step 11
Separate eggs into yolks and whites. Ensure no yolk gets into the whites for proper whipping. Chill the whites.

In a blender, combine cottage cheese, melted butter, yolks, starch, sugar, vanilla sugar, and lemon zest. Blend until smooth and thick.

Whip egg whites separately until stiff peaks form.

Gently fold whipped whites into the cottage cheese mixture.

Add chopped strawberries and carefully mix.

Pour the filling onto the baked dough and smooth out. If extra dough or filling remains, bake separately for a small strawberry-cottage cheese casserole.

Return the pie to the oven for about 30 minutes.

Prepare the confiture. Can be made in advance and gently warmed before topping. Use fresh or frozen strawberries.

In a blender, puree strawberries with sugar.

Set aside part of the puree and mix in starch.

Pour the remaining puree into a saucepan, bring to a low boil. When boiling, add the puree with starch and cook until thickened.

Spread warm confiture evenly over the tart. Cool at room temperature, then refrigerate 6-8 hours.
