Stewed Pork Ribs with Cabbage

Step 1
How do you stew pork ribs with cabbage? Prepare the ingredients. Try to choose pork ribs with layers of fat on them. This will make the finished dish more aromatic and tastier. Rinse the ribs well under running water and dry them with a paper towel. Cut them along the bones into small pieces.
Step 2
Pour a little vegetable oil for frying into a hot pan and add the sliced ribs. Fry them on all sides over medium heat until golden.
Step 3
While the ribs are frying, peel and rinse the onion and carrot. Finely chop the onion. Grate the carrot on a coarse grater.

Add the chopped vegetables to the pan with the fried ribs. Mix and fry everything together for another 3–4 minutes.

Remove the upper, wilted leaves from the cabbage. Cut the head of cabbage into 2 parts and shred one half with a sharp knife. Add the shredded cabbage to the pan. Mix and cover the pan with a lid. Reduce the heat and stew the dish, stirring from time to time, for about 10 minutes. Add a little water to the pan if you notice that the vegetables are starting to fry.

Then add a little tomato paste. Season with salt and spices to taste. You can use any spices you like, but I recommend limiting them to ground pepper so as not to overpower the main aroma of the dish. Mix and leave to stew for another 20 minutes. Adjust the stewing time yourself, as it will depend on the quality of the cabbage. Young cabbage cooks faster than older cabbage.
Step 7
The longer the cabbage stews, the better all the ingredients soak up one another’s juices and aromas. Still, judge the cabbage’s doneness according to your taste. Some people like it to remain slightly crisp, while others prefer it completely soft. Remove the finished stewed cabbage with ribs from the heat and leave it covered so the dish can rest.
