Stew in Pots with Mushrooms, Baked in the Oven

Besides pork, you can use any other meat in this dish. Keep in mind that cooking time, taste, and calorie content will vary. For example, beef takes longer to cook than pork, while chicken fillet or turkey cooks faster.
Preparation
Step 1
You can use any type of meat for this recipe. It could be chicken, beef, or, as in my case, pork. Choose boneless meat with minimal fat. Peel the potatoes in advance and rinse them under running water. You can use any kind of mushrooms. I’m using champignons (button mushrooms).
Step 2
Cut the pork into small pieces and place it in a bowl. Pour soy sauce over it. Sprinkle a bit of spices on the meat. Mix well and let it marinate for about 30 minutes.
Step 3
Rinse the mushrooms to remove any dirt and pat them dry. Heat a frying pan until hot, pour in a bit of vegetable oil, and add the chopped mushrooms. Fry for 5-7 minutes. During this time, they’ll shrink a bit. Transfer the sautéed mushrooms onto a plate.
Step 4
In the same pan, fry the marinated meat for 3-5 minutes. In this time, the meat will change color, and its juices will be sealed inside the pieces.
Step 5
Peel and finely chop the onion.
Step 6
Divide the fried meat among prepared clay pots. Next, add the chopped onion. Then add the mushrooms.
Step 7
Cut the peeled potatoes and distribute them into the pots. Sprinkle with salt and spices.
Step 8
In a separate glass, mix water with tomato paste and sour cream. Pour this sauce into the pots. If desired, you can add more liquid. Just don’t fill the pots to the top, or it may boil over in the oven. Cover the pots with lids and place them into a cold oven. Turn it on to 392°F (200°C) and leave the pots to cook for 45-50 minutes. Adjust the time according to your oven.
Step 9
If the potatoes have become soft, you can remove the pots from the oven. Or you can turn off the oven and let them sit inside a bit longer. The stew in pots with mushrooms and potatoes is ready. Enjoy your meal!
