Sponge Roll with Quark Cream and Dried Apricots

Preparation
Step 1
Prepare the necessary ingredients to make a tasty sponge roll for tea time.
Step 2
Crack 4 eggs into a large bowl and add salt to taste.
Step 3
Beat the eggs with a mixer until lightly foamy.
Step 4
Add 1/2 tsp vanilla sugar and 100 g sugar (about 1/2 cup).
Step 5
Beat with a mixer until fluffy.
Step 6
Put 50 g bran (about 1/2 cup) into a suitable container and grind it with a blender.
Step 7
Add the ground bran to the egg mixture in portions and fold in with a spatula.
Step 8
Sift 150 g wheat flour (about 1 1/4 cups) into the bowl in portions.
Step 9
Mix thoroughly to make a batter with the needed consistency.
Step 10
Line a baking sheet with parchment and spread the batter evenly. Bake in a preheated oven at 190°C (374°F) for 25 minutes.
Step 11
Put 300 g quark/cottage cheese (about 10 1/2 oz) into a deep bowl, then add 50 g sugar (about 1/4 cup).

Add 2 tbsp sour cream.
Step 13
Blend everything with a blender until smooth and uniform.

Transfer 1 tbsp of the prepared quark mixture into a separate bowl for decorating the roll later.
Step 15
Dice 100 g dried apricots (about 3 1/2 oz) into small cubes (soaked beforehand in hot water), then add them to the quark mixture.

Mix everything well.

After 25 minutes, remove the sponge from the oven and let it cool slightly.

Trim off the firm edges of the sponge and flip it over.

Spread the prepared quark-and-apricot cream over the sponge in an even layer and set it aside for 1 hour.

After 1 hour, roll the sponge up tightly into a roll.

Wrap the roll in plastic wrap and refrigerate for 2-3 hours so it soaks with the cream.

Add 1 tbsp sour cream to the reserved quark mixture, then add 1 tbsp ground pistachios and mix well.

After the time has passed, remove the roll from the refrigerator and spread the prepared cream from the bowl over the roll.

Smooth the cream evenly over the roll.

Decorate the top with strawberries, then sprinkle with ground pistachios.

Refrigerate the finished roll for another 1-2 hours.
