Soup with Rice, Potatoes, and Meat is hearty and flavorful – it will gather the whole family around the table! It’s the perfect main course for a family lunch. It's easy to make, and the vegetables can be adjusted based on the season and your preferences. You can control the thickness of the soup by adjusting the amount of rice.

Preparation
Step 1
Prepare the ingredients. You can use any type of meat — pork, beef, or even chicken works well. Choose tender, boneless cuts as they won’t take long to cook. I’m using pork shoulder. You can use any kind of rice — round, long, or parboiled. I chose parboiled rice so it doesn’t overcook in the soup. You can reduce the rice amount if you don’t like very thick soups.
Step 2
Cut all the ingredients. Rinse the meat, pat it dry, and cut it into small pieces. It’s best to remove any excess fat and tendons.
Step 3
Peel and dice the onion into small cubes. You can also add garlic if you like.
Step 4
Peel and dice the carrot into small cubes.
Step 5
Cut the tomato in half and grate each half on a coarse grater. Do not grate the skin; discard it. Alternatively, you can peel the tomato and then chop it finely. The grating method is faster.
Step 6
Dice the potatoes.
Step 7
Take a heavy-bottomed pot. The meat and vegetables will be sautéed in it, so proper heating is important. Heat the pot over medium heat. Add vegetable oil for frying. Add the meat and sauté for about 7 minutes, stirring occasionally, until the color changes.
Step 8
Add the onion to the meat and cook for a couple of minutes. Then add the diced carrots and grated tomato. Stir. Add salt and spices to taste (I used paprika). Stir again and let the meat and vegetables cook for 5 more minutes.
Step 9
Pour hot water into the pot. Adjust the water amount according to the number of ingredients and your preferences. Wait for it to come to a boil, then reduce the heat to low and cover the pot with a lid. Simmer for 30-40 minutes, depending on the type and cut of meat.
Step 10
Add the diced potatoes and washed rice. Cook the soup for another 15 minutes after it boils, until the potatoes are soft.
Step 11
Cover the pot with a lid, turn off the heat, and let the soup sit for 15-20 minutes. This will allow the rice to finish cooking.
Step 12
Serve the soup with rice, potatoes, and meat, garnished with chopped herbs. Enjoy your meal!
