Preparation
Step 1
Use pasta of any shape, but avoid very small types like vermicelli, as they may stick together.
Step 2
Boil the pasta in salted water until almost done. Follow package instructions for cooking time and taste-test to avoid overcooking. Drain in a colander.

Peel and rinse the onion, then finely chop. Heat a bit of vegetable oil in a skillet and sauté the onion 2-3 minutes until slightly golden.

Add the cooked pasta to the onion and mix.
Step 5
In a separate bowl, combine eggs and grated cheese. Add salt and pepper or other spices to taste.
Step 6
Pour the egg-cheese mixture over the pasta and stir. Cook 2-3 more minutes until the eggs coat the pasta and are fully cooked.
