Preparation
Step 1
Prepare the ingredients. Use any shape of pasta you prefer and choose a hard cheese. Basil, parsley or a mixture of both will work well as the fresh herbs.
Step 2
Bring a pot of salted water to a boil, add the pasta and cook until tender according to the package instructions, usually for 12–15 minutes. Drain the cooked pasta in a colander and leave it to drain thoroughly.
Step 3
Cut the bacon into pieces and fry it until crisp and golden. If the bacon is fatty, it will release enough fat for cooking; otherwise, add a small amount of vegetable oil.
Step 4
Transfer the fried bacon to a plate so it remains crisp.
Step 5
Add the finely chopped garlic to the bacon fat remaining in the pan and cook briefly until fragrant.
Step 6
Meanwhile, cut the tomatoes into cubes.
Step 7
Add the chopped tomatoes to the pan with the garlic and stir.
Step 8
Add the chopped herbs and season lightly with salt. You can also add aromatic dried herbs. Heat everything for approximately 1 minute without stewing the tomatoes, so they retain their shape.
Step 9
Add the cooked pasta and fried bacon to the pan and mix until evenly combined.
Step 10
Transfer the finished pasta to plates and serve immediately. Sprinkle with grated cheese before serving.
