Skillet Meat-and-Rice “Hedgehogs” with Gravy
A quick, convenient, filling everyday dish! I love these skillet meat-and-rice “hedgehogs” with gravy because the rice goes in raw right into the mince - no pre-cooking needed. And you can use ready-made ground meat from any kind of meat.

Preparation
Step 1
How to make meat-and-rice “hedgehogs” in a skillet? Prepare the necessary ingredients. We’ll make the “hedgehogs” from two types of meat - pork and beef.
Step 2
First, turn the meat into mince: cut the pork and beef into pieces and grind through a meat grinder.
Step 3
Peel the onion and rinse in cold water. Finely chop one onion and add it to the mince.
Step 4
Rinse the rice several times in cold water, then add it to the bowl with the mince. Add a little salt and spices to taste.
Step 5
Mix everything well until smooth. The meat mixture will be firm enough to form balls.
Step 6
Pour a little vegetable oil into a frying pan and heat until hot. With wet hands, form balls from the mixture and place them in the hot pan. Fry on all sides.
Step 7
Heat a second pan separately. Finely chop the second onion and sauté it with a little vegetable oil for 2-3 minutes. Then add tomato paste and heat it together with the onion for 1-2 minutes.
Step 8
While the onion is cooking, the meat balls will have browned on all sides.

Add the meat “hedgehogs” to the pan with the onion-tomato base. Pour in water and bring to a boil. Cover and simmer over low heat for 20-25 minutes. During this time, the rice will soften and expand. The grains will stick out from the meat balls in all directions, resembling little “hedgehogs.” Adjust the amount of water depending on how much gravy you want.
