Simple Zucchini Patties in a Skillet

Simple, quick, tasty, and very healthy! No meat! These easy zucchini patties in a skillet are made from a minimal set of ingredients and turn out soft, juicy, and delicious. Perfect for a family lunch or dinner.

Preparation
Step 1
For the recipe, use one small zucchini or half of a large one. If using a large zucchini, peel off the skin and remove the seedy core.
Step 2
Grate the peeled zucchini on a large grater into a large bowl. Sprinkle lightly with salt and mix. Let sit for about 15 minutes. The zucchini will release a lot of liquid - squeeze and drain the excess juice.
Step 3
Add an egg and your choice of spices to the zucchini. You can use any seasonings you like - ground pepper and a bit of paprika work well. Mix everything.
Step 4
Gradually add flour and mix it into the zucchini. Depending on the moisture content of the zucchini, you may need a bit more or less flour.
Step 5
Stir in finely chopped herbs. The zucchini mixture should not be too runny.
Step 6
Heat a skillet over medium heat and pour in a little vegetable oil. Use a spoon to scoop the zucchini mixture directly onto the pan. Fry over low heat for about 2-3 minutes on each side.
Step 7
The zucchini patties should turn a nice golden brown.
Step 8
Transfer to a paper towel to absorb excess oil. They are especially tasty when hot. Serve with sour cream if desired. Enjoy!
