Preparation
Step 1
Measure the ingredients for the dough. Butter must be cold. Adjust sugar to taste.
Step 2
Mix flour with baking powder and sift. Add sugar and salt to the sifted flour and mix.
Step 3
Grate cold butter into the dry mixture.
Step 4
Quickly rub with hands into crumbly texture. Keep butter cold to ensure a tender shortcrust.
Step 5
Beat one egg in a small bowl until uniform.
Step 6
Add the beaten egg to the butter crumb and mix.
Step 7
Knead dough quickly, place in a bag or wrap in plastic wrap, and chill for 20-25 minutes.
Step 8
Meanwhile, prepare the filling. Use ripe bananas for a more aromatic and sweet pie. Any soft cottage cheese works.
Step 9
Peel bananas and cut roughly. Place bananas, cottage cheese, egg, sugar, vanilla sugar, and sour cream in a blender. Adjust sugar to taste.
Step 10
Blend until smooth and uniform.
Step 11
Remove chilled dough. Reserve some dough for decoration. Roll out the rest between plastic sheets into a circle larger than the baking pan.
Step 12
Line the bottom of the pan with parchment, lightly grease sides. Place dough in pan and form edges. Spread the filling evenly.
Step 13
If edges are higher than filling, press down to level.
Step 14
Roll out reserved dough and cut small circles for decoration.
Step 15
Place dough circles around the pie edges. Optional: make wave patterns on top with a spoon.
Step 16
Bake in a preheated 375°F (190°C) oven for about 35 minutes, until lightly golden. Adjust time for your oven. Cool completely.
Step 17
Slice into portions and serve. Enjoy!
