Step 1
Start by preparing the ingredients for the filling. Choose cottage cheese that isn’t too dry - at least 5% fat or higher. The fattier it is, the tastier the pie will be. Pressed cottage cheese works well. Use large eggs; if yours are small, take three. Any cheese will do - Gouda, Suluguni, or mozzarella for pizza.

Wash, dry, and finely chop the dill. You can also use other herbs like parsley, cilantro, green onions, or a mix of several.

If your cottage cheese is grainy rather than pressed, rub it through a sieve or mash it thoroughly with a fork.

Grate the cheese on a coarse grater.

In a bowl, combine the cottage cheese, eggs, and grated cheese. Mix thoroughly until smooth.

Add the chopped dill and minced garlic. If you prefer a milder flavor, use less garlic or skip it. Salt carefully - taste the filling first since cheese is already salty, and too much can ruin the balance. The dough will also have some saltiness.

Mix again well. You’ll get a thick, creamy mixture - the filling is ready.

Now prepare the dough. Use high-quality flour and room-temperature butter (remove it from the fridge in advance). Eggs can be large or medium.

Combine the eggs with softened butter and mix. Don’t try to make it perfectly smooth - the butter won’t fully blend with the liquid and will float in tiny droplets.

Add sifted flour, salt, and baking powder.

Knead a soft, elastic dough. Don’t overmix shortcrust dough - it comes together quickly and should easily separate from hands and bowl. Depending on your flour and egg size, you may need a little more or less flour. The dough should be soft and pliable.

Press the dough into the bottom and sides of a parchment-lined, greased springform pan (8-9 inches / 20-22 cm) or baking ring. Make sure there are no cracks where the filling could leak.

Spread the cheese-cottage cheese filling evenly over the dough. Bake in a preheated oven at 350°F (180°C) for about 45 minutes. The exact baking time depends on your oven and pie thickness. Halfway through, rotate the pie for even baking.
