Salad with Chicken and Mushrooms

Preparation
Step 1
You can replace chicken with turkey, beef, or pork, but cooking time and calories will change.
Step 2
Wash, dry, and dice chicken breast. Season with spices and let marinate 20 minutes.

Dice the onion.

Heat vegetable oil in a skillet over medium heat. Add onion and sauté 3-4 minutes until translucent.
Step 5
Add chicken to the onions and cook together until lightly golden, stirring occasionally.
Step 6
Hard-boil the eggs, cool, peel, separate whites and yolks. Grate whites coarsely, yolks finely. You can grate yolks directly over the salad for a fluffier texture.
Step 7
Wash, shake dry, and finely chop dill. Optional: substitute or combine with parsley, cilantro, or a mix of herbs.
Step 8
Drain and dry marinated mushrooms. You can use other mushrooms, raw or sautéed, fresh or pickled.
Step 9
Place a culinary ring on a plate. Layer chicken and onions, pressing down lightly. Spread a layer of mayonnaise on top. Using a piping bag is easier than a spoon.
Step 10
Add a layer of grated egg whites, then a thin layer of mayonnaise. Optional: lightly salt layers, though mayonnaise is usually sufficient.
Step 11
Add grated yolks on top, followed by mayonnaise.
Step 12
Sprinkle chopped herbs over the top.

Place marinated mushrooms in the center on top of dill. Refrigerate 1 hour for flavors to meld.
Step 14
Remove the culinary ring before serving. If preferred, serve directly from a salad bowl. Enjoy!
