Roasted Rabbit with Vegetables in the Oven

A delicious dish for a family dinner! Speaking of this dish, the saying comes to mind — “rabbits are not just valuable for their fur…” Oh, it’s also incredibly delicious diet meat! And if you bake it in sour cream, with a side of potatoes and carrots… Believe me, you haven’t tasted anything more delicious!

Step 1
Let’s prepare the ingredients.
Step 2
It’s recommended to soak rabbit meat in water for a bit to improve its taste. Then cut it into portion-sized pieces.
Step 3
Put the meat into a bowl, season with salt, pepper, and spices. Mix well and leave it to marinate for about 30 minutes.
Step 4
Meanwhile, peel the vegetables and cut them. Slice the potatoes into large wedges, and cut the carrots into sticks. Preheat the oven to 350°F (180°C).
Step 5
Take a deep, oven-safe dish and layer the vegetables mixed together. Add a little salt.
Step 6
Place the marinated rabbit pieces on top. Press the meat slightly into the vegetables.
Step 7
For the sour cream sauce, in a bowl mix together sour cream, minced garlic, a few spices, and one cup (approx. 240 ml) of water. Mix well.
Step 8
Pour the sour cream sauce over the rabbit and vegetables.
Step 9
Cover the dish with foil and place it into the oven. Bake under foil for about 40 minutes. Then remove the foil and continue baking for another 50-60 minutes. The rabbit will brown beautifully and develop an appetizing crust. Check for doneness, as baking times can vary between ovens. For me, this time was enough for the rabbit to cook through.
