Roasted Rabbit with Potatoes in the Oven

Advice
Serve the roasted rabbit with potatoes hot, accompanied by fresh or pickled vegetables. Root vegetables are best washed under running water with a brush or a stiff sponge.
Preparation
Step 1
For roasting, it’s best to use the hind part of the rabbit, as it’s more tender and fatty. Reserve the upper part for soups or stews. Use any spices you prefer. If you’re using ready-made spice blends, be sure to check the ingredients on the package. Often, such mixes already contain salt, so keep that in mind to avoid oversalting. This time, I used only ground black pepper.
Step 2
Remove any internal organs from the rabbit if present. Carefully check the surface for any remaining fur and remove it. Rinse the carcass well under running water. Cut the rabbit into portion-sized pieces using a sharp knife. Avoid using a cleaver, as bone fragments could get stuck in the meat. Trim off any fat pieces - these will also come in handy. Rub the rabbit pieces with salt and spices and leave them to marinate for about 15 minutes.
Step 3
While the rabbit is marinating, prepare the vegetables. Wash and peel the potatoes, carrots, and onions thoroughly. Now is a good time to preheat the oven to 350°F (180°C).
Step 4
For roasting, choose a baking dish with high sides. I use an oval ceramic dish approximately 12×8 inches (30×20 cm). Grease the bottom and sides with vegetable oil. Cut the potatoes and carrots into large, elongated pieces and place them in the dish. Slice the onion into half rings. Add to the baking dish and spread evenly. Add a little salt. To avoid eye irritation when cutting onions, rinse both the onion and your knife under cold water.
Step 5
First, distribute the fat pieces evenly over the potatoes. Then lay the meat pieces on top, pressing them slightly into the potatoes.
Step 6
Prepare the sauce. Peel, rinse, and finely chop the garlic. Mix water, sour cream (if using), garlic, and a pinch of salt.
Step 7
Pour the sauce in a thin stream to distribute it evenly. The sauce shouldn’t fill more than half the height of the dish. If needed, add more water or don’t use all of the prepared sauce.
Step 8
Cover the dish with foil and place it in the preheated oven on the middle rack.
Step 9
Bake for 40 minutes. Remove the foil and continue baking for about another hour, until the rabbit is nicely browned. The exact time depends on your oven’s performance.
