Roasted Meat Stew in Pots (Oven-Baked)

You can use frozen or dried mushrooms instead of fresh ones (use 5-6 times less if dried). Frozen mushrooms can be thawed (e.g., in the microwave using the defrost setting - check your device instructions) and drained, or used without thawing if liquid in the dish isn’t crucial. Dried mushrooms must be rinsed thoroughly (they are not washed before drying) and soaked in cold water for at least 2-3 hours.
Preparation
Step 1
You can use any kind of meat: lamb, chicken, beef, or as in this recipe - pork. Peel and rinse the potatoes beforehand.
Step 2
Cut the pork into small pieces and place in a bowl. Add mustard, salt, and spices. Mix well and let it marinate for 30-60 minutes.
Step 3
Peel and rinse the onion and carrot. Cut the carrot into small cubes, finely chop the onion, and dice the potatoes into small chunks.
Step 4
Sear the meat over high heat until it changes color. This step is needed so the meat pieces don’t stick together while baking.
Step 5
Divide the browned meat among prepared ceramic pots.
Step 6
Rinse, dry, and cut mushrooms into 2-4 pieces. Add them to the pots.
Step 7
Add the chopped vegetables - potatoes, onion, and carrot. Add a little salt.
Step 8
Top with sour cream. Press garlic directly into the pots. You can also add some chopped herbs. Do not fill the pots to the top. Optionally, add a bit of water to each pot. Cover with lids and place in a cold oven. Turn it on to 350°F (180°C), wait for it to heat, and bake for 1 hour.
Step 9
Then turn off the oven, open the door slightly, and let it rest for another 15 minutes. The stew in pots is ready! You can serve it directly in the pots or on a plate. Enjoy!
