Roast potatoes with honey and bacon

Crispy roasted potatoes with sweet honey, spicy chili, roasted garlic, and crispy bacon - a flavour-packed side dish perfect for any meal.

Preparation
Step 1
Place the potatoes in a saucepan, cover with cold water, and add 1 tablespoon of salt. Bring to the boil and cook for 7-8 minutes, or until tender. Drain and let the potatoes steam dry for 10 minutes.
Step 2
Preheat the oven to 220C. Place a layer of oil on an oven tray and heat in the oven for 10 minutes.
Step 3
Prepare the garlic by placing it on a square of foil, drizzling with a little oil, and wrapping it tightly.
Step 4
Add the cooked potatoes and wrapped garlic to the hot tray and roast for 30 minutes. Stir the potatoes and continue roasting for another 10-15 minutes, until they are crisp and golden brown.
Step 5
While the potatoes are roasting, cook the bacon in a frying pan until crisp and evenly browned. Stir in the honey and chili flakes to combine.
Step 6
Drizzle the honeyed bacon over the roasted potatoes, squeeze in the desired amount of roasted garlic, and toss everything together so the potatoes are well coated. Serve immediately.
