Rice with Tomato Paste in a Skillet

Preparation
Step 1
Use long-grain parboiled rice. It holds its shape better and is less likely to turn into mush.
Step 2
Peel the onion, rinse it under cold water, and finely chop.
Step 3
Heat a frying pan until hot and add a little vegetable oil. Add the chopped onion and sauté for 2-3 minutes until soft and translucent.

Add tomato paste to the pan. Sprinkle with paprika and other spices, like a mix of ground peppers. Stir everything together.

Add the rice to the pan and stir to combine with the onion and tomato paste. Heat for about 1 minute.
Step 6
Pour hot water over the rice. Add salt. Cover with a lid and simmer over low heat for 15-20 minutes until the rice is soft and the water is absorbed.
Step 7
If the rice is still slightly firm and the water is absorbed, add a little more water. Remove from heat and let it rest under the lid for 5-10 minutes. Serve with any meat or fish dish. Enjoy!
