Rice with Meat and Vegetables in a Skillet

Preparation
Step 1
You can use any type of meat: chicken, beef, or, as in this recipe, pork. Adjust the type and amount of vegetables to your taste and availability. I use parboiled long-grain rice for a fluffy result.
Step 2
Cut the meat into small pieces. Heat a skillet until hot and add a little vegetable oil. Add the meat and fry for 5-7 minutes, stirring occasionally. Then cover with a lid and simmer on low heat for 10-15 minutes. You may add a little water to prevent burning, or allow the meat to brown slightly.
Step 3
Meanwhile, prepare the vegetables. Peel the onion and carrot, rinse under running water. Slice the onion into half rings or smaller. Grate the carrot coarsely or cut into rounds.
Step 4
Add the prepared onion and carrot to the skillet with the meat. Stir and fry together for 3-4 minutes.
Step 5
Add the chopped tomatoes and heat everything together for another 3-4 minutes. The tomatoes will soften and release juice.
Step 6
Add the rinsed rice to the skillet and mix with all ingredients.
Step 7
Pour in hot water, season with salt and spices to taste. Bring to a boil. Cover and cook on low heat for 20-25 minutes until the rice absorbs the water and becomes tender.
Step 8
Rice with meat and vegetables is ready! Mix well, serve on plates, sprinkle with fresh herbs, and serve hot. Enjoy!
