Rice Soup with Meatballs and Broccoli

Bright, colorful, and appetizing! Rice soup with meatballs and broccoli is very quick and simple to cook. It can be made with chicken broth or just water - either way, it’s delicious.

Preparation
Step 1
You can use pork, beef, chicken, or mixed ground meat. Add a little salt and your favorite dry spices to the ground meat. I used garlic powder, ground pepper mix, and a pinch of dried basil. Optionally add half of a small onion, finely chopped. Mix the meat well.
Step 2
Peel potatoes, onion, and carrot. Rinse all vegetables in clean water. Roll the ground meat into small balls.
Step 3
Cut potatoes into cubes or sticks. Rinse the rice several times until the water runs clear.
Step 4
The soup can be cooked in broth or water. Pour the desired amount of water into a pot and bring it to a boil. Add potatoes, meatballs, and rice. Skim off the foam with a spoon, reduce heat to medium, and cook until potatoes and meatballs are done (about 15-20 minutes). Meanwhile, prepare the sauté: fry chopped onion and carrot in vegetable oil.
Step 5
Divide broccoli into small florets. Dice the tomatoes. I used cherry tomatoes - their sweetness adds a special touch. If needed, peel the tomatoes beforehand.
Step 6
Add the sauté, broccoli, and tomatoes to the pot. Salt to taste. Bring the soup to a boil over high heat, then turn off the stove after a few seconds. Let the soup sit on the hot stove covered for 10-15 minutes. During this time, the broccoli and tomatoes will finish cooking.
Step 7
When serving, offer freshly ground black pepper and herbs. Tastes great with fresh sour cream!
